Biodynamic since 2009 (Demeter certified), Benot ploughs with horses, harvests by hand, ferments in oak with native yeasts, and adds zero dosage (Brut Nature), with minimal added sulfur. The Shaman cuve is roughly two thirds Pinot Noir and one third Chardonnay from Grand Cru parcels. Everything here is the
