then complete their second fermentation in bottle and rest on lees for roughly a year before disgorgement

2021 Susana Esteban 'Procura' Vinhas Velhas Branco, Vinho Regional Alentejano, Portugal Matsui Shuzo as well as our WVProcura Branco comes from centenarian vines at roughly 700 meters of elevation. It is a field blend of traditional varieties from the region. Fermented in stainless steel and then aged in used Burgundy barrels for about 8 months, then further in stainless steel for another few months before bottling.
